Blu Onice
APPELLATION: DENOMINATION OF CONTROLLED ORIGIN (DOC)
GRAPE VARIETY: 100% AGLIANICO
This great wine takes its name from the rocky land on which the vineyard is located, close to an old Onyx cave. The stones coming from this cave are yellow with very peculiar blue streaks.
Grapes are harvested by hand and transported in small boxes of 20 kg each to the winery where they are subject to light pressing and then left for maceration with continuous replacement for about 20 days. Fermentation with starter yeasts followed by malolactic fermentation and finishing in French oak barrels of 225hl for about 14 months.
This wine has a brilliant red color with main aromas of ripe red fruits, cherries and spices. The barrel aging supports the wine with additional character without covering the original aromas.
