EXTRA BRUT SPARKLING WINE (CLASSIC METHOD)
GRAPE VARIETY: 100% NEBBIOLO
This adorable sparkling wine, vinified with the Classic Method (Champenoise), is obtained from 100% Nebbiolo grapes, cultivated on the hills surrounding Romagnano Sesia. After the crushing and destemming the grapes are sent to the press to be separated from the skins and then fermented for 20 days at a temperature of 15 °. Malolactic fermentation is not carried out. The disgorgement comes after at least 24 months of maturation on the lees.
The sparkling wine has an onion skin bright rosé color and has a subtle and persistent perlage. On the nose it is delicate, with notes of fresh red fruits and a hint of bread crust. On the palate it is lively, dry, full-bodied and preserves the typical character of Nebbiolo grape.
