GRAPE VARIETY: Inzolia, Chardonnay
This extremely pleasant and elegant wine combines a dominant Inzolia character nicely supported by different selections of Chardonnay biotypes.
The bunches are selected and harvested by hand in small 14 kg boxes. After de-stemming grapes are softly pressed with closed lung pneumatic presses. Fermentation takes place at controlled temperature using selected yeasts, partly in steel (90%) and partly in French oak barrels (10%). No malolactic fermentation. During the about 6 months refining, the wine is constantly subjected to "bâtonnage" to favor the lysis of the yeasts. Follows maturation in the bottle for about 2 months.
The wine has a wonderful straw yellow color with green reflections. On the nose it is seductive. At the beginning, hints of white flowers blend well combine with aromatic vegetables. After, enveloping notes of flowers and citrus leaves emerge. On the mouth it is full-bodied wine with a pleasant structure and minerality that guarantee a great gustatory persistence.
