APPELLATION: CONTROLLED AND GUARANTEED DENOMINATION OF ORIGIN

GRAPE VARIETY: Corvina, Corvinone, Rondinella, Oseleta, Negrara.

This is a dessert wine which is the best companion of all types of dry cakes or biscuits. It is made using the same blend of selected vine grapes used for Amarone (Corvina, Corvinone, Rondinella, Oseleta and Negrara) and, as you can see in the Story Section, it can be considered the ancestor relative of Amarone itself.

After late harvesting and drying up to January/February it is pressed and left for fermentation with its own natural yeasts in steel containers in a dedicated room at controlled temperature for about 40 days. During fermentation, pumping over is carried out at least three times a day to break the cap of the pomace to extract more perfume, taste and color from the grape grains. Fermentation is stopped after about thirty days in order to retain a high sugar content. Aging takes place in 225hl French oak barriques for about 12 months and continues in bottles for an additional 10 months before selling.

The wine has an intense ruby red color with distinct and typical aromas. On the nose it has hints of marmalade and spirits with excellent complexity, additional balanced hints of vanilla, ripe fruit, black cherry, cherry and black cherry in alcohol. On the palate it is elegant, immediately warm and enveloping, absolutely pleasant and not cloying, with considerable length and persistence.
