GRAPE VARIETY: Inzolia Rosa
This interesting wine is obtained from particular selections of an ancient biotype from Calabria commonly known in the Campobello di Licata area as Inzolia Rosa. The valorization of native vines also through the rediscovery of ancient biotypes, the experimentation in the vineyard though the selection of clones and the extreme care to identify the most suitable soil, have always been the salient elements of Milazzo’s work as winemakers. The "Inzolia Rosa" is an example of this. An ancient biotype from Calabria that has always been cultivated on these hills, which becomes the heart of their rosé wines and sparkling wines. The limestone clay of the Munti area, on the highest slope of the hill looking towards the Northwest, allows these grapes an ideal ripening cycle, which preserves their aromas, minerality and an interesting acidic backbone that are well suited to the creation of wines rosé.
The grapes are crushed-destemmed after a short cold maceration to favor their release of color and are pressed with a pneumatic press. After a rapid cold clarification, the musts are decanted and fermented at a controlled temperature and with selected yeasts, in steel tanks. The emerging wine has a candy pink color. An intense fruitiness emerges on the nose where notes of blackberry and raspberry are softened by hints of lychee. On the palate it is fragrant, structured and shows an excellent balance to guarantee gustatory persistence.
