It was the Arabs of neighboring North Africa who introduced the Zibibbo grape to the Sicilian territory. ZIBIBBO stands for “raisin” in Arabic language. This wine has always been an extraordinary ambassador of the Mediterranean aroma and taste in the world.
After gentle pressing the must is vinified in stainless steel tanks at a controlled temperature (16/18 °C). Once the first 5-6° of alcohol has been carried out during alcoholic fermentation, ethanol of wine origin is added up to about 16° of alcohol, in order to block the fermentation process and thus preserve most of the sugars and aromas of the original must.
This wine has a light straw yellow color with golden reflections. On the nose it shows an intense, harmonious and persistent, with clear hints of apricot jam, candied citrus, flowers and orange blossom honey. On the palate it is pleasantly sweet, full-bodied and persistent, with notes of honey and white fruit in syrup.
It is a magnificent dessert wine, ideal with all dry and creamy pastries, to taste also with nougat, fruit and artisanal ice cream, or, in the best case, any sweet or cake of the Sicilian tradition, such as Sicilian cannolo or cassata.
